Carefully remove some of the top soil to see if it is a sucker or a branch.

I would keep this, and use it as your future tree once the tree gets a bit older

They looking good, it seams however the soil is still on the wet side, but as long it drains well should be ok.

and they keep growing, which means ??? the saucer ... i don't use them, except maybe for willows, which at this time are just cuttings

I'm not the one who put them there. It was my mom. I have since removed the saucers. :)

They're doing fine, saucers are there to hold extra water, most trees in pots don't tolerate it so much. It seems to be a bit more complicated, to grow trees in pots, than some other plants. Some plants grow in anything.

You have one of the best types of trees to learn from, and it looks like your doing great. ;)
